Slimming World’s Spanish orange cake is spicy and mellow with a soft sponge – you will not believe it’s guilt-free! The whole family will love this easy orange cake, which serves 10 people. It takes about an hour to prepare and cook the orange sponge, plus the cooling time. If you want to change this cake, why not exchange the orange of this recipe for fresh lemon and lemon juice instead? Oranges are ubiquitous in Spain and in many cities, orange trees line the streets, especially in southern cities like Seville. Ingredients
low calorie cooking spray
4 separate eggs
50g of powdered golden sugar
5 tablespoon sweetener
2 tablespoons finely grated orange zest
Juice of 2 oranges, plus segments of orange to decorate
150g of self-raising flour
1 teaspoon of baking powder
For the syrup:
Zest of an orange
120ml of freshly squeezed orange juice
1 level teaspoon arrowroot
1 tablespoon sweetener
1 teaspoon caster sugar
Method
Preheat the oven to 180 ° C, gas. 4. Line a 20 cm moving floor sandwich pan with non-stick parchment and spray with some low-calorie cooking spray.
Put the egg yolks, sugar, sweetener and grated zest and orange juice in a bowl and whisk until thick and pale.
Whisk the egg whites in a separate bowl until soft peaks form, then stir in the egg yolk mixture. Sift the flour and yeast into another bowl, then pour the eggs and stir in very gently. Pour this mixture into the prepared baking pan and bake for 25-30 minutes or until the cake is lifted and firm to the touch. Set aside to cool.
Meanwhile, put the syrup ingredients in a small saucepan over high heat and bring to the boil while beating constantly.
When it begins to thicken, remove from heat and let cool slightly.
Decorate the cake with orange wedges, drizzle with sauce and slice to serve.
