Slimming World Sweet and Sour Chicken

Sweet and sour chicken.

Here’s the Slimming World sweet and sour chicken recipe:

Ingredients:

4 skinless and boneless chicken breasts, cut into pieces

1 onion, thinly sliced

1 red pepper, chopped into pieces

1 green bell pepper, sliced

1 carrot, thinly sliced

2 garlic cloves, chopped

1 tin (400 g) chopped tomatoes

4 tablespoons white vinegar

4 tablespoons soy sauce

2 tablespoons artificial sweetener (e.g. granulated sweetener such as Splenda)

1 tablespoon tomato puree

Low calorie cooking spray

Salt and pepper to taste

Chopped green onion, for garnish (optional)

Cooked rice or noodles, to serve

Instructions:

Preheat the oven to 200°C (180°C fan)/400°F/gas mark 6.

Spray a non-stick frying pan with low-calorie cooking spray and place over a medium heat. Add the chicken pieces and cook until crispy on all sides. Remove the chicken from the pan and set aside.

In the same pan, add the onions, bell peppers, carrots and garlic. Cook for 5 minutes or until the vegetables have softened.

Add the chopped tomatoes, white vinegar, soy sauce, artificial sweetener and tomato puree to the pan. Mix well. Season with salt and pepper to taste.

Bring the mixture to the boil, then reduce the heat and allow to simmer for 10 minutes.

Meanwhile, place the cooked chicken pieces in an ovenproof dish and pour over the sweet and sour sauce. Stir well to coat the chicken evenly.

Place the dish in the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the sauce has thickened slightly.

Remove from the oven and garnish with chopped green onions if desired.

Serve the sweet and sour chicken from Slimming World with cooked rice or noodles.
