Bouncing with excitement at these Slimming World Cornish Pasties.
Ingredients:
400g lean beef, diced
1 large onion, finely chopped
2 medium-sized potatoes, peeled and diced
2 medium-sized carrots, peeled and diced
1 small cabbage (rutabaga), peeled and diced
1 cube of beef stock dissolved in 150ml boiling water
1 tsp dried thyme
Salt and pepper to taste
Low fat cooking spray
4 sheets of phyllo pastry
Instructions:
Preheat the oven to 200°C (180°C fan/400°F/Gas 6).
Spray a large non-stick frying pan with low calorie cooking spray and place over a medium heat. Add the diced beef and cook until browned on all sides. Remove the beef from the pan and set aside.
Add the sliced onion to the same frying pan and cook until softened.
Add the diced potatoes, carrots and cabbage to the pan, along with the beef stock. Stir well and bring to the boil. Cover and cook for about 10 minutes until the vegetables are slightly soft.
Return the beef to the pot, season with dried thyme, salt and pepper. Stir everything together and cook for another 5 minutes. Remove from the heat and allow the filling to cool.
Take one sheet of filo pastry and spray it with low calorie cooking spray. Fold it in half lengthwise and place a quarter of the filling on one end. Fold the pastry over the filling to form a triangle. Continue folding in the shape of a triangle until you reach the end of the dough. Repeat this process with the remaining sheets of dough and the filling.
Place the patties on a baking tray lined with parchment paper. Sprinkle the top of the patties with low calorie cooking spray.
Bake in the preheated oven for 25-30 minutes until the patties are golden brown and crispy.
Serve the Slimming World Cornish patties hot or cold, with a salad or steamed vegetables.
