Slimming World Banana Bread

This banana bread from Slimming World is a healthier version of the traditional recipe using rolled oats and minimal flour. Here’s the Slimming World banana bread recipe:

Ingredients:

4 ripe bananas

4 eggs

40g sweetener (e.g. granulated stevia or any other low calorie sweetener)

1 tsp. vanilla extract

1 tsp. baking powder

1 tsp ground cinnamon

60 g of self-rising flour

60g oat flakes

Instructions:

Preheat the oven to 180°C (350°F) and line a loaf pan with parchment paper.

In a mixing bowl, mash the bananas with a fork until smooth.

Add the eggs, sweetener and vanilla extract to the mashed banana. Mix well.

In a separate bowl, mix together the baking powder, cinnamon, self-rising flour and oatmeal.

Gradually add the dry ingredients to the banana mixture, mixing well after each addition until all the ingredients are combined.

Pour the batter into the prepared loaf tin and flatten the top.

Put the mould into the preheated oven and bake for 45-50 minutes or until a toothpick inserted in the centre comes out clean.

After cooking, remove the banana bread from the oven and let it cool in the mould for a few minutes.

Transfer the bread to a wire rack and allow it to cool completely before slicing.
