Ingredients:
low-calorie cooking spray
750g casserole vegetable pack (incl onion, swede, carrot and parsnip)
3 garlic cloves
400g can tomatoes
1 tbsp tomato puree
1-2 tsp smoked paprika
1.5 litres boiling vegetable stock
Instructions:
In a large non-stick casserole pan, apply a few sprays of low-calorie cooking spray and place it over a medium heat. Add the onion from the casserole vegetable pack and the garlic. Cook gently for 4-5 minutes until they become softened.
Add the remaining chopped casserole vegetables to the pan and cook them over a low heat for a few minutes.
Stir in the canned tomatoes, tomato puree, and smoked paprika, ensuring that all the ingredients are well combined.
Pour the boiling vegetable stock into the pan, then bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pan, and allow it to simmer for approximately 30 minutes, or until the vegetables are tender.
Remove the pan from the heat and use a stick blender or food processor to blitz the soup until you achieve the desired consistency. If you prefer a thinner soup, you can add boiling water at this stage.
Season the soup according to your taste preferences. Add salt, pepper, or any additional herbs and spices you desire.
