Slimming World Strawberry Mousse Cheesecake

Ingredients:

1 large egg white

6 digestive biscuits, finely crushed

6 sheets leaf gelatine (total weight 10g)

3 x 175g pots fat-free no-added-sugar strawberry yogurt

a few drops of vanilla extract

a few drops of pink food colouring

1 level tsp sweetener granules

100g strawberries, hulled and diced, plus 8 small whole strawberries to decorate

sprigs of mint and 1 level tsp icing sugar, to decorate

Instructions:

Preheat your oven to 180°C/fan 160°C/gas 4. Line a baking sheet with baking paper and place four 7cm pastry rings on top.

In a bowl, lightly whisk the egg white. In another bowl, combine the finely crushed digestive biscuits with the whisked egg white. Stir well to combine. Spoon the mixture into the pastry rings and press it down firmly. Bake for 15 minutes, then allow the biscuit bases to cool.

While the bases are cooling, place the gelatine sheets in a shallow bowl and cover them with cold water. Let them soak for 10-12 minutes until they become soft. Squeeze out the water from the gelatine sheets and return them to the bowl. Add 6 tablespoons of just-boiled water to the bowl and let the gelatine dissolve.

In a blender, combine the fat-free strawberry yogurt, a few drops of vanilla extract, pink food colouring, and sweetener granules. With the blender running, slowly pour in the dissolved gelatine mixture and blend until well combined. Transfer the mixture to a separate bowl and stir in the diced strawberries.

Spoon the yogurt and strawberry mixture over the biscuit bases in the pastry rings. Cover each ring with cling film and refrigerate for 6-8 hours, or until the mousse is set.

To serve, carefully loosen the edges of each cheesecake by running a hot palette knife around the inside of the pastry rings. Gently turn out each cheesecake onto a plate. Decorate each cheesecake with two whole strawberries and a sprig of mint. Finally, dust the cheesecakes evenly with the icing sugar.
