Slimming World friendly chicken masala curry

Ingredients

Serves: 4 

2/3 teaspoon whole cumin seeds

cooking spray or oil, as needed for cooking

1 medium white onion, diced

1 red pepper, chopped

1 teaspoon finely chopped garlic

1 teaspoon finely chopped fresh root ginger

2/5 jar Pataks® tikka masala spice paste

100ml water

500g chicken breast fillet, diced or sliced

300g tinned chopped tomatoes

1 lime, zested and halved

20g fresh coriander, finely chopped

150g natural yoghurt (fat free if dieting)

Method

In a non-stick pan or skillet, heat a little cooking spray or oil over medium heat. Add the cumin seeds and fry them until they crack and release their aroma, which should take about 30 seconds.

Add the diced onion to the pan and cook gently until it starts to soften. Then add the chopped red pepper, finely chopped garlic, fresh root ginger, and tikka masala spice paste. Continue frying gently for about 2 minutes to allow the flavors to meld together.

Pour approximately 100ml of water into the pan and mix well with the ingredients. Continue cooking until most of the water has evaporated.

Add the diced or sliced chicken breast to the pan and cook while stirring until the chicken is sealed and has a white surface all over.

Stir in the tinned chopped tomatoes, squeeze the juice of the lime halves into the pan, and add the lime zest and finely chopped fresh coriander. Give it a good stir to combine all the ingredients.

Reduce the heat to low and let the curry simmer gently for 15 to 20 minutes until the sauce has thickened and the chicken is no longer pink in the center.

Once the curry is cooked, remove it from the heat and stir in the natural yogurt until it is well incorporated into the sauce.

Serve the Slimming World chicken masala curry with your choice of Slimming World chips or rice. For a complete meal, add some steamed green beans on the side, which is a great option if you’re following a Slimming World compliant diet.
