Ingredients:
6 eggs
1 1/2 c blanched almond flour
4 T unsalted butter 1/4 t salt 3 t baking powder
1/4 t cream of tartar
2 t liquid stevia
1 t vanilla extract
1/2 c blueberries
Instructions:
Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).
Separate the 6 eggs into two bowls, one for the egg whites and one for the egg yolks.
In the bowl with the egg whites, add 1/4 teaspoon of cream of tartar. Blend the mixture until soft peaks form, which should take about 1-2 minutes of blending.
In the bowl with the egg yolks, add 4 tablespoons of melted unsalted butter, 3 teaspoons of baking powder, 1/4 teaspoon of salt, 1 teaspoon of vanilla extract, and 2 teaspoons of liquid stevia. Blend the mixture together while gradually adding 1 1/2 cups of blanched almond flour, adding 1/3 of the flour at a time.
Gently pour half of the fluffy egg white mixture into the egg yolk mixture, carefully folding them together until well combined.
Add the 1/2 cup of blueberries to the batter, gently folding them in.
Transfer the batter into a greased loaf pan.
