Recipe makes 9:
Boil 500 ml milk (but keep a little back to mix with the egg) with a few clicks of sweetener tablets and half a tablespoon of butter.
Then in a separate bowl, whisk one egg yolk with the remaining milk and then mix in 2 tablespoons of cornflour and 1 tablespoon of flour.
Slowly add to the milk mix, whisking constantly while cooking until thickened.
Whisk the egg white and then fold into the mixture once cooled with a dash of vanilla essence.
Spoon into silicone muffin tin. Bake 20 mins on 170 and sprinkle with cinnamon. Let them cool then pop them out and enjoy.
Hubby ate half of these milky treats. How dairy!
