Ingredients:
Low-calorie cooking spray
2 large onions, roughly chopped
400g of your preferred dried pasta shapes (such as fusilli or spiral)
500g of lean beef mince (5% fat or less)
6 large tomatoes, sliced
80g of reduced-fat Cheddar cheese, coarsely grated (or see tip below)
Instructions:
Begin by preheating your grill to high for later use.
In a medium-sized saucepan, lightly spray with low-calorie cooking spray and place it over medium-low heat. Add the chopped onions, cover, and gently cook for approximately 10 minutes until they become soft and translucent.
While the onions are cooking, prepare your pasta. Follow the cooking instructions on the pasta package, but remember to drain and return it to the pan a couple of minutes before the recommended cooking time ends.
Uncover the saucepan with the onions and increase the heat to high. Add the lean beef mince and cook for about 5 minutes or until it’s browned, making sure to break up any lumps that form. Drain off any excess liquid and season lightly with salt and pepper.
Now, combine the cooked beef with the cooked pasta, creating a delicious mixture.
Spoon half of this mixture into a shallow baking dish. Layer it with half of the sliced tomatoes and season them lightly with a pinch of salt and pepper.
