Healthy Mini Banana Raisin Loaves

Ingredients:

120g/4.23oz rolled oats

2 eggs

½ tablespoon baking powder

15g/0.5oz chopped raisins or sultanas

45g/1.5oz thinly sliced bananas (3 slices)

¼ teaspoon cinnamon

6 tablespoons fat-free plain yoghurt

Pinch of salt

6 tablespoons of sukrin 1 or your preferred sweetener

Optional: 1 teaspoon sukrin gold

Cooking spray

Instructions:

Preheat your oven to 180°C (350°F, gas mark 4).

Pulse the rolled oats in a mini blender or food processor until finely ground.

In a mixing bowl, combine the ground oats, baking powder, cinnamon, pinch of salt, and chopped raisins or sultanas. Mix thoroughly.

In a separate bowl, whisk together the eggs, fat-free plain yoghurt, and sukrin 1 or your chosen sweetener.

Combine the egg-yoghurt mixture with the oat mixture, ensuring all ingredients are well incorporated.

Grease three sections of a mini loaf tray with cooking spray.

Distribute the mixture evenly among the three greased compartments of the mini loaf tray.

Place a thin banana slice on top of each mini loaf and optionally sprinkle with sukrin gold.

Lightly spray the loaf tops with cooking spray.

Bake in the preheated oven for 35-40 minutes or until the loaves are lightly golden. To test for doneness, insert a skewer into the centre of a loaf—it should come out clean.

Allow the mini loaves to cool for 10 minutes in the tray before gently removing them using a silicone spatula.
