2 syn per portion
Ingredients:
700 g lean stewing beef, cut into bite-sized pieces
3 onions, finely chopped
3 celery stalks, finely chopped
3 carrots, chopped into small chunks
500 ml low-calorie ale (or non-alcoholic beer)
2 bay leaves
500 g passata (crushed tomatoes)
1 tbsp tomato puree
1 tbsp whole wheat flour
1 beef stock cube (low-sodium)
Salt and pepper to taste
Cooking spray (low-calorie)
Instructions:
In a large pot or Dutch oven, spray a light coating of cooking spray. Heat over medium heat.
Add the finely chopped onions to the pot and sauté for about 7 minutes, or until they become soft and translucent.
Stir in the finely chopped celery and continue to cook for an additional 2 minutes, allowing the flavours to meld.
Place the lean stewing beef into the pot, ensuring you’ve removed any visible fat. Gently brown the beef on the outside, stirring occasionally.
Sprinkle the whole wheat flour over the beef, stirring well to evenly coat the beef and vegetables. This will help thicken the stew.
Pour in the low-calorie ale, and bring the mixture to a simmer. Allow it to cook for a couple of minutes, letting the alcohol evaporate and the flavours combine.
Add the passata and tomato puree to the pot, stirring to incorporate them into the mixture.
Crumble the low-sodium beef stock cube into the stew, and then add the chopped carrots and bay leaves. Season with salt and pepper according to your taste preference.
Cover the pot with a lid and reduce the heat to low. Allow the stew to simmer gently for 1-2 hours, stirring occasionally.
For the slow cooker option, transfer the stew mixture to a slow cooker after step 8. Set the slow cooker to high and cook for 6 hours, or on low for 10-12 hours.
Once the beef is tender and the flavours have melded beautifully, your Healthy Beef and Ale Stew is ready to be enjoyed. Serve it hot and savour the hearty goodness guilt-free.
