Ingredients:

400 g thin-cut steak, trimmed of fat and sliced into thin strips

1.5 tbsp cornflour

2 tsp Chinese 5 spice

1 red chilli, finely chopped

1 red pepper, sliced into thin strips

2 garlic cloves, crushed

3 cm piece of ginger, peeled and cut into thin matchsticks

4 spring onions, finely sliced lengthways

4 tbsp rice wine vinegar or white wine vinegar

1 tbsp sweet chilli sauce

1 tbsp soy sauce

1 tbsp tomato ketchup

1 tsp sesame oil or sunflower oil

Instructions:

In a bowl, combine the cornflour and Chinese 5 spices. Thoroughly coat the strips of steak with this mixture, ensuring each piece is evenly covered.

Heat the sesame oil or sunflower oil in a wok or large frying pan over medium-high heat. To ensure an even distribution of oil, use a silicone pastry brush to spread it around the pan.

Add the coated beef strips to the hot pan and stir-fry for 5-10 minutes, allowing the beef to cook through and develop a beautiful brown sear. Once cooked, transfer the beef to a warm bowl and set it aside.

To deglaze the pan and infuse flavour, use 1 tablespoon of rice wine vinegar. Using a wooden spoon, gently scrape up any residues from the bottom of the pan to avoid scratching it. Now add the sliced red pepper, chopped chilli, spring onions, crushed garlic, and ginger matchsticks. Stir-fry the mixture for 2 to 3 minutes, ensuring the garlic doesn’t burn. If needed, add a bit more low-calorie cooking spray to prevent sticking.

In a separate bowl, combine the remaining rice wine vinegar, sweet chilli sauce, soy sauce, and tomato ketchup. Add 2 tablespoons of water and mix well to create the sauce.

Introduce the sauce mixture to the stir-fried vegetables in the pan. Allow the mixture to bubble gently for a couple of minutes, allowing the flavours to meld.

Now, reintroduce the cooked beef into the pan. Stir well to combine all the components. Cook for approximately 5 minutes, stirring constantly until the sauce has nearly disappeared, coating the beef and vegetables with its flavorful essence.
