lemon drizzle loaf

Cake ingredients:
4 eggs
50g caster sugar
5 tbsp sweetener
150g self raising flour
1 tsp Baking powder
Zest of 2 lemons
1 tsp icing sugar

Icing ingredients:

Juice of 2 lemons
60ml water
4 tsp sweetener

Method:
1. preheat oven to 190 degrees C and line a loaf tin with baking paper

2. Separate the eggs and place the yolks, caster sugar, flour, sweetener, baking powder and lemon zest and whisk (this resembled breadcrumbs for me and looked really wrong until later – just go with it)

3. In a separate bowl, whisk the egg whites until softly peaks and then fold into the yolk mixture

4. Pour the mixture into the loaf tin and place in the oven for 25-30 mins and leave to cool
Whilst the cake is cooling, place the drizzle ingredients into a pan on a medium heat and stir continuous until the mixture thickens.

5. Poke holes in the cake and and then drizzle over

6. Once the sauce has set a little dust with the icing sugar

7. Cut into 10 slices at 4 syns each and enjoy!
